Hello Everyone and Happy Wednesday!
This month has definitely been a busy one getting ready for baby boy to arrive in just a few short months! I cannot believe that I am already well into my third trimester!
Something that I have been really trying to work on is making healthy dinners that keep me full, and I mean FULL! This little man is making his mama want to snack ALL. THE. TIME! So, for the last couple of weeks I have been making a lot of quinoa bowls, since they are delicious and oh so filling! Today I wanted to share my recipe for my Roasted Veggie Quinoa Bowls.
So, to start off, I wanted to choose some super delicious and healthy veggies that taste awesome roasted. I chose carrots, sweet potatoes, and chickpeas. The carrots and sweet potatoes are very flavorful as well as being nice and tender while the chickpeas add a fantastic crunch! When it comes to seasoning my veggies, I like to keep it simple. I rinse/ wash my veggies (and dry my chickpeas), toss in some olive oil, and coat all the vegetables evenly in the Italian Seasoning and Garlic Salt.
I spread those evenly on a baking sheet and bake at 415°F. While those are baking, I take some quinoa (make sure to rinse it!) and put that to cook. Quinoa is awesome because it is healthy and easy to make (pretty much like instant rice). After that is done cooking, I add in about and handful of spinach to get my greens in, and stir that in until it is nice and tender from the heat of the quinoa.
By then the roasted vegetables are roasted, so I just fill the bottom of my bowl with my quinoa and spinach mix, add the roasted veggies, and I like to top it off with some kind of a dressing or sauce. Here I used my avocado dressing, (recipe coming soon) which blended with the flavors of my quinoa bowl nicely!
Ta-da! A super delicious, healthy and FILLING dinner!
Like I said, we have been eating this a lot lately, and I swear it gets better every time!
